20 large fresh oysters
250 g bacon
4 large leeks (white part only)
3 celery stalks
1 cup bread crumbs
1 st. l. flour
2 tbsp. l. dry white wine
250 ml heavy cream
2 tbsp. l. grated pecorino romano cheese
1 st. l. butter
1 bay leaf
salt, cayenne pepper
STEP-BY-STEP COOKING RECIPE
Step 1
Melt the butter in a small skillet. Add flour and cook, whisking constantly, 2 minutes. Pour in the cream and cook over low heat, stirring, until the mixture thickens slightly. Remove from fire.
Step 2
Cut the leeks lengthwise and rinse. Cut into thin half rings. Remove skin from celeriac and chop. Finely chop the bacon and fry in a heavy bottomed pan over medium heat until crispy. Transfer bacon to paper towel.
Step 3
Leave in the pan for about 2 tbsp. l. fat, add leek, celery, bay leaf and cayenne pepper and fry over medium heat, 12 minutes. Pour in the wine and boil. Pour in the cream sauce and bring to a boil. Cook until thickened, 3 minutes. Add bacon and cheese, after 1 min. remove from fire. Salt and pepper.
Step 4
Line a baking sheet with foil. Place the shell halves with the oysters on a baking sheet. Put on each oyster 2 tbsp. l. mixture from the pan, sprinkle with breadcrumbs. Bake at 220°C for 6-8 minutes.
